Cupcakes

Using the cake recipe below, you can make at least 30 2" cupcakes!

Here's the recipe for buttercream.

Ingredients
- 225g butter
- 1 tablesppon of thick cream
- 350g icing sugar
- Drops of vanilla essence

Method
1) Beat butter and cream together
2) Gradually add icing sugar and beat until smooth
3) Add a few drops of vanilla essence

You will also need a piping bag and a piping tip. Design as you wish. =)

You can also add decorations like M&M chocolate and other edible icing sugar decoration.

Shepard's Pie

Ingredients- 300g minced meat
- 1 onion, peeled and sliced
- 6 medium-sized potatoes
- small bag of mixed vegetables (peas, carrots, corns)

Seasoning for minced meat: Salt and pepper
Seasoning for potatoes: milk, butter, salt and pepper

Method
1. Stir fry onion until soft
2. Throw in minced meat
3. Add seasoning
4. Add mixed vegetables
5. Fry until cooked. Add a little water to keep it moist.
Keep aside.

1. Boil potatoes. I boil mine with the skin. I find it easier to remove.
2. After they are cooked, remove the skin.
3. Marsh with a fork and add salt, pepper, milk and butter to taste. I can't really say how much is good. I guess you should add it to your liking. I like mine really salty, you see.

Now, place the cooked minced meat in a dish and cover it with the marshed potatoes.

Use the fork to create some lines on top for decoration (haha... yes... I know... what decoration??)

Place it in an oven that is heated to 190c for about 40mins or until the top is nice and brown.

Banana Walnut Cake

One of my favourties

Ingredients- 3 large ripen bananas, mashed (pureed)
- 125g of salted butter
- 100g of caster sugar
- 2 eggs
- a few drops of vanilla essence
- 50-80g of walnuts (crushed)
- 250g of plain flour
Method
Heat the oven at 180c
1. Beat the butter and sugar together until fluffed (pale and smooth)
2. Add the eggs and beat into the mixture
3. Add the vanilla essence
4. Fold in the mashed banana and walnuts
5. Fold in the flour
6. Pour into a tin
7. Bake for 1hour or until a skewer inserted comes out clean
8. Serve

Potato Au Gratin

Ingredients- 4-5 potatos, peeled and sliced
- 1 onions, peeled and sliced into rings
- 500ml milk
- 30g of flour
- dash of salt to taste
- 270g of cheddar cheese (white or red, up to you)
- 125g of butter (more, if you would like)

Method
1. Heat oven to 200c
2. Arrange the sliced potatoes (half) on the bottom of an aluminium tray
3. Top with onion rings
4. Cover with the rest of the sliced potatoes
5. Melt butter in a saucepan
6. Add flour and dash of salt and stir until the mixture thickens
7. Add milk and stir continuously
8. Add all of the cheese at one time and stir until the lumps dissolved
9. Pour mixture over the potatoes
10. Place in oven to bake for 1.5 hours.

Serve.

Baked Salmon

Ingredients- Salmon Fillets, 1 for each person
- Salt and pepper
- Butter

Method
1. Heat the oven to 200c
2. Marinate the salmon fillets with salt and pepper to taste
3. Place each slice of fillet on an aluminium foil and spread butter on it
4. Wrap
5. Bake for 10-15mins

Serve

Nachos Cheese Dip

Ingredients- 15g flour
- 30g butter
- 2 pinch of salt
- 5 slices of processed cheese (kraft singles etc)
- 250ml milk

Method
1. Melt the butter in a saucepan and stir in the flour until blended
2. Pour in the milk and stir until mixture thickens
3. Add the salt
4. Add the cheese and stir continuously until it melts and blend into the mixture

Ready to serve.

If the cheese hardens, heat it in a microwave. Whatever that remains, use it as bread spread. =)

Early Grey Tea Cake Recipe

Ingredients- 280g of self-raising flour
- 200g of sugar
- 225g of butter
- 5 bags of tea leaves (remove the tea leaves from the teabags)
- a few drops of vanilla essence
- 5 eggs
- 20ml of milk

Method
1. Preheat the oven at 170c
2. Beat the sugar with the butter until light and fluffy
3. Add the tea leaves
4. Add a few drops of vanilla essence
5. Beat in the eggs, one at a time, until the mixture is completely blended
6. Add the milk and mix
7. Fold in the flour, 1/3 at a time, and mix at low speed
8. Scoop into a 9"x5" loafpan
9. Bake for 60mins (make sure a toothpick inserted comes out clean!)
10. Remove and cool on a rake
11. Serve!
