Cupcakes

Using the cake recipe below, you can make at least 30 2" cupcakes!

Here's the recipe for buttercream.

Ingredients
- 225g butter
- 1 tablesppon of thick cream
- 350g icing sugar
- Drops of vanilla essence

Method
1) Beat butter and cream together
2) Gradually add icing sugar and beat until smooth
3) Add a few drops of vanilla essence

You will also need a piping bag and a piping tip. Design as you wish. =)

You can also add decorations like M&M chocolate and other edible icing sugar decoration.

Shepard's Pie

Ingredients- 300g minced meat
- 1 onion, peeled and sliced
- 6 medium-sized potatoes
- small bag of mixed vegetables (peas, carrots, corns)

Seasoning for minced meat: Salt and pepper
Seasoning for potatoes: milk, butter, salt and pepper

Method
1. Stir fry onion until soft
2. Throw in minced meat
3. Add seasoning
4. Add mixed vegetables
5. Fry until cooked. Add a little water to keep it moist.
Keep aside.

1. Boil potatoes. I boil mine with the skin. I find it easier to remove.
2. After they are cooked, remove the skin.
3. Marsh with a fork and add salt, pepper, milk and butter to taste. I can't really say how much is good. I guess you should add it to your liking. I like mine really salty, you see.

Now, place the cooked minced meat in a dish and cover it with the marshed potatoes.

Use the fork to create some lines on top for decoration (haha... yes... I know... what decoration??)

Place it in an oven that is heated to 190c for about 40mins or until the top is nice and brown.

Banana Walnut Cake

One of my favourties

Ingredients- 3 large ripen bananas, mashed (pureed)
- 125g of salted butter
- 100g of caster sugar
- 2 eggs
- a few drops of vanilla essence
- 50-80g of walnuts (crushed)
- 250g of plain flour
Method
Heat the oven at 180c
1. Beat the butter and sugar together until fluffed (pale and smooth)
2. Add the eggs and beat into the mixture
3. Add the vanilla essence
4. Fold in the mashed banana and walnuts
5. Fold in the flour
6. Pour into a tin
7. Bake for 1hour or until a skewer inserted comes out clean
8. Serve

Potato Au Gratin

Ingredients- 4-5 potatos, peeled and sliced
- 1 onions, peeled and sliced into rings
- 500ml milk
- 30g of flour
- dash of salt to taste
- 270g of cheddar cheese (white or red, up to you)
- 125g of butter (more, if you would like)

Method
1. Heat oven to 200c
2. Arrange the sliced potatoes (half) on the bottom of an aluminium tray
3. Top with onion rings
4. Cover with the rest of the sliced potatoes
5. Melt butter in a saucepan
6. Add flour and dash of salt and stir until the mixture thickens
7. Add milk and stir continuously
8. Add all of the cheese at one time and stir until the lumps dissolved
9. Pour mixture over the potatoes
10. Place in oven to bake for 1.5 hours.

Serve.

Baked Salmon

Ingredients- Salmon Fillets, 1 for each person
- Salt and pepper
- Butter

Method
1. Heat the oven to 200c
2. Marinate the salmon fillets with salt and pepper to taste
3. Place each slice of fillet on an aluminium foil and spread butter on it
4. Wrap
5. Bake for 10-15mins

Serve

Nachos Cheese Dip

Ingredients- 15g flour
- 30g butter
- 2 pinch of salt
- 5 slices of processed cheese (kraft singles etc)
- 250ml milk

Method
1. Melt the butter in a saucepan and stir in the flour until blended
2. Pour in the milk and stir until mixture thickens
3. Add the salt
4. Add the cheese and stir continuously until it melts and blend into the mixture

Ready to serve.

If the cheese hardens, heat it in a microwave. Whatever that remains, use it as bread spread. =)

Early Grey Tea Cake Recipe

Ingredients- 280g of self-raising flour
- 200g of sugar
- 225g of butter
- 5 bags of tea leaves (remove the tea leaves from the teabags)
- a few drops of vanilla essence
- 5 eggs
- 20ml of milk

Method
1. Preheat the oven at 170c
2. Beat the sugar with the butter until light and fluffy
3. Add the tea leaves
4. Add a few drops of vanilla essence
5. Beat in the eggs, one at a time, until the mixture is completely blended
6. Add the milk and mix
7. Fold in the flour, 1/3 at a time, and mix at low speed
8. Scoop into a 9"x5" loafpan
9. Bake for 60mins (make sure a toothpick inserted comes out clean!)
10. Remove and cool on a rake
11. Serve!

Basic Butter Cookie Recipe

This makes about 90 cookies.

Ingredients
- 225g salted butter
- 200g sugar
- 1 egg
- 335g flour
- a few drops of vanilla essence

Method
1. Pre-heat the oven to 200c
2. Mix the butter and sugar together until light and fluffy
3. Beat the egg in and add the vanilla essence
4. Stir in the flour and fold
5. Press the cookies in the desired shape
6. Bake for 10minutes
7. Remove and cool before packing

Use a cookie press to shape the cookies. The brand I use is Wilton's Cookie Press. It is really good

Green Tea Butter Cake

Ingredients- 140g sugar
- 250g flour
- 250g butter (salted)
- 1/2 teaspoon baking powder
- 2 tablespoons green tea powder
- 4 eggs

Method
1) Beat the sugar and the butter until fluffy and white
2) Beat the eggs into the mixture
3) Mix flour, baking powder and green tea powder
4) Pour flour mixture into sugar/butter/egg mixture and fold
5) Pour into mould
6) Bake at 170c for 50mins to an hour (or until a toothpick comes out clean)

Serve!

Simple Cinnamon Sugar Bread

Ingredients

1. Cinnamon powder
2. Brown sugar
3. Butter
4. Bread

Method

1. Spread butter on a slice of bread
2. Sprinkle cinnamon powder over the bread
3. Scoop a tablesoon of brown sugar onto the bread
4. Toast and serve hot!

Cinnamon Rolls

Ingredients- 180ml milk
- 60g butter (I used salted)
- 400g of all purpose flour
- 7g of yeast
- 60ml of water
- 1 egg

Cinnamon Spread:
- 220g brown sugar
- 115g butter (salted)
- 1 tablespoon of ground cinnamon

Method
1. Boil milk in a small saucepan until bubbly.
2. Add butter and stir until combined. Leave to cool
3. Add yeast to 3/4 of the flour and mix in a mixing bowl
4. Add water, egg and milk mixture and beat
5. Add the remaining 1/4 of flour into the mixture and beat
6. Stop and knead with your hands until it's smooth and elastic. Add more flour if the dough is sticky
7. Cover with a lid (or damp cloth) and prepare the Cinnamon Spread.
8. Mix the brown sugar, butter and ground cinnamon (Cinnamon Spread)
9. Preheat the oven to 190 degrees
10. Roll the dough into a flat thin layer. For neatness, cut the rolled dough into a 12x9 rectangle.
11. Spread the Cinnamon Spread over the dough.
12. Roll the dough. As it will expand, try to roll it into a thin log if you prefer smaller cinnamon rolls.
13. Cut the rolled dough into 12 pieces of about 1inch each.
14. Place them in a 12-hole muffin tray OR a square/rectangle baking tin OR cookie tray (I used a cookie tray)
15. Cover with a piece of clothe and leave it for 30mins until it doubles in size.
16. Bake in oven for 20min.

SERVE!

Strawberry Tart

IngredientsFor crust:
- 200g flour
- 100g butter (unsalted)
- 2 tsp of sugar
- a pinch of salt (if you use salted butter, you can skip this)
- 2-3 tbsp of milk

For custard:
- 5 egg yolks
- 50g sugar
- 500ml milk
- 50g flour
- few drops of vanilla essence

Method

For crust:
1) Sift the flour into a mixing bowl
2) Add sugar
3) Add salt
4) Mix
5) Add butter (cubed) and rub into the flour until it becomes like bread crumbs
6) Add the milk (add more if required) and knead into a dough
7) Gladwrap and Chill for 30mins
8) Roll the dough out until it is bigger than your tart mould and place it into the tart mould. Cut the excess the dough away and chill for another 30mins
9) Prick the dough
10) Bake in a pre-heat oven (200c) for 20-25mins
11) Remove from oven and cool

For custard:
1) Beat egg yolks with sugar in a mixing bowl
2) Add the flour and continue to beat
3) Transfer into a saucepan and add the milk
4) Heat over low heat and stir constantly
5) Add the vanilla essence
6) Stir until thickens
7) Remove from heat and cool before use

Pour the custard onto the crust and decorate it with fruits. For me, I used strawberries and I sifted icing sugar over it before serving. =)

No Bake Cheesecake

Ingredients:
- 250g (a block) of Philadelphia Cream Cheese
- 100g of castor sugar
- 150g of cream (whip cream, thicken cream are fine. I used Nestle Cream)
- A pack of digestive biscuits (I used the Marie Brand biscuits)
- 75g of salted butter


Method:
1) Pound the biscuits into powder and add the butter. Then press it into a tin (the size of a bread loaf tin should work)
2) Beat the cream cheese with the sugar until it's fluffy.
3) Add the cream and beat for 30sec
4) Pour the cheese mixture into the tin
5) Freeze overnight (or at least 2 hours)

Serve!

Chocolate Cake (Dense)

Ingredients
- 250 gram of self raising flour, sieved
- 50 gram of cocoa powder (I substituted this with a 60gm sachet of instant milo powder and it tasted just as good!)
- 260 gram of brown sugar
- 200-250 gram of milk chocolate bar, break into pieces
- 250 gram of butter, softened
- 200 ml of water
- 4 eggs

Method:
1) Microwave the chocolate and butter together for 1-2mins (or until both are melted)

2) In the meantime, place flour, sugar and cocoa powder in a large mixing bowl. Add eggs and water into the dry mixture. Beat with electrical mixer with low speed for 1 – 2 minutes.

3) Stop beating, add in warm melted chocolate and butter mixture. Continue beating with medium-low speed (speed no.2 out of 5) for 6 – 8 minutes, or until it looks smooth and lightly foamy kind of consistency (you may test its readiness by scooping a spoonful of mixture, and it should adhere on the upturned spoon for at least 1 second).

4) Grease 8” square or round cake tin evenly using butter or olive oil. Spoon cake mixture into cake tin.

5) Preheat oven using 150°C (top and bottom heat on). Place cake tin at centre rack. Bake for 1 hour. Toothpick inserted to the cake should come out clean. Allow cake to cool on wire rack, for about an hour.

6) When cake is completely cooled, remove from tin.

You can either serve it warm or chilled. The cake somehow tasted better when chilled and left overnight.

Cookie Lollipop

Ingredients:- 350g plain flour
- 100g self raising flour
- 125g butter (cubed)
- 125g sugar
- 125g golden syrup
- 1 lightly beaten egg
- 10-20ml of milk (optional)

Others:
- lollipop sticks
- cookie cutter
- edible decorators (sprinkles etc)
- plastic wrappers
- ribbons

Method:
1) Sift the plain flour and self raising flour together into a mixing bowl.
2) Add sugar and mix well.
3) Add the butter and rub it into the flour with your finger tips until it becomes like bread crumbs.
4) Create a well in the centre of the dry mixture and pull in the golden syrup and egg.
5) Knead into a dough.
6) IF it's still dry and refuses to roll into a dough, add the milk a little at a time and continue kneading.
7) Pre-heat oven to 170c.
8) Roll the dough out onto a cookie sheet or dry floured surface. 1/2inch thick would be good so that you can insert the lollipop sticks without breaking the cookie apart.
9) Cut into desired shapes.
10) Insert the lollipop stick and make sure it is centralised.
11) Decorate.
12) Bake for 20-25mins because of the thickness of the cookie
13) Remove and allow to cool completely
14) Pack and you're done! =)

Lava Eggs

Ingredients
- 5 tablespoons of sashimi soy sauce
- 3 tablespoons of water
- 2 tablespoons of brown sugar
- 4 tablespoons of mirin
- 1 small teaspoon of dark soy sauce

- 4 eggs
- 1 small ziploc bag

Method
1. Place all ingredients in a saucepan and bring to boil. Turn fire off after sugar melts.
2. Leave to cool.
3. Boil another saucepan of water and place the eggs into the saucepan for EXACTLY 7 mins.
4. Remove the eggs immediately after 7mins and place them into a bowl of iced water for 2mins.
5. Peel the eggs gently.
6. Place in ziploc bags and pour in the marinade.
7. Keep overnight in the refrigerator and enjoy it with a bowl of ramen!
